Halloween Cupcakes with Collagen – Healthy Cakes

Cupcakes
200g room temp butter
200g caster sugar
200g self raising flour
1 teaspoon of vanilla essence
½ teaspoon of baking powder
4 eggs
100g pumpkin puree
½ teaspoon cinnamon
½ teaspoon nutmeg

Frosting
1 sachet of Absolute Collagen
200g full fat cream cheese
100 g of butter
500g icing sugar
½ teaspoon of salt
1 teaspoon of vanilla essence

Method
Preheat the oven to 180 degrees C. Line a muffin tray with cupcake cases and leave to one side.
In a mixer add the butter and caster sugar and beat until creamy and smooth
Add in eggs one at a time, following my vanilla essence, salt and baking powder. Mix until
combined.
Add the flour and mix, then mix in slowly the pumpkin puree, and spices until smooth, glossy and light.. Inhale the Autumn spice!
Grab your lined muffin tray and place one tablespoon of mix in each cupcake case. This should
make around 12-18 cupcakes.
Bake in the middle of the oven for 12 minutes until risen and golden brown.
Take out the oven and leave to cool.
For the icing
Mix butter cream cheese in a mixer on high until smooth.
Add in slowly the icing sugar until it is well combined.

Lastly add vanilla essence, Absolute Collagen sachet and salt into the mixture.

Blend this mixture on high. This should create a thick frosting ready for piping. If the mixture is
runny add more icing sugar and mix until thicker.
Pop frosting in a piping bag and pipe on the cooled cupcakes. Alternatively spoon the frosting
on the cupcakes if you do not have a piping bag.
Sprinkle on some cinnamon and enjoy
